More than one way to have pizza

Are you thinking it’s about more casseroles today?  Well, sort of. It’s really about pizza today. I was reading through a lot of information about when and where this “pie” originated, what year, how pizza got its name, etc. and do you really care about this information. H-m-m-m, I don’t think I do.

Reading through recipes I did find a pizza casserole…using a microwave. A quick way to put a pizza on the table.

MICROWAVE PIZZA CASSEROLE
1 lb. hamburger
1/2 c. each, diced onion and green pepper
1 – 16 oz. can pizza sauce
1 – 4 oz. can sliced mushrooms
4 oz. sliced pepperoni
2 c. uncooked, medium noodles
1-1/2 c. water
1/2 t. garlic powder
1/2 t. each, oregano and basil leaves, crushed
3/4 c. shredded mozzarella cheese

In a 2 qt. micro casserole,  microwave hamburger, stirring after 2-1/2 minutes, to break up hamburger. Continue cooking for 3 minutes or until no longer pink. Drain thoroughly; return to casserole and add remaining ingredients except cheese; mix well. Cook 17 minutes on HIGH, stirring twice during cooking. Sprinkle cheese over casserole; cook on  HIGH 3-4 minutes or until cheese is melted.   Makes 6-8 servings.

STUFFED CRUST 
PEPPERONI PIZZA
1 – 8 oz. can refrigerated pizza crust
6  pieces (tubes) string cheese, cut in 1-inch pieces
1/2 c. pizza sauce
20 original or hot and spicy pepperoni slices
1 c. shredded mozzarella cheese

Grease a 9x13-inch baking pan. Unroll dough and press into bottom and 1-inch up sides of greased pan. Places pieces of string cheese along the inside edges of the dough.  Fold 1-inch pieces over and around the cheese; press dough edges to seal. Top the crust with sauce, pepperoni and cheese. Bake 15 minutes at 425 degrees; sprinkle mozzarella cheese over pizza and continue to bake  or until crust is golden brown and cheese is melted. Makes 6 servings. Note:  It’s best to cut with a pizza “wheel” until you get to the stuffed crust. Use a sharp knife to cut through the edge. You can also add cooked hamburger or Italian sausage, canned mushrooms, green pepper, thinly sliced before adding mozzarella cheese if you wish.

TACO PIZZA
1-1/4 c. cornmeal
1-1/4 c. flour
2 t. baking powder
1 t. salt
2/3 c. milk
1/3 c. butter or margarine, melted
1/2 lb. hamburger
1/2 lb. bulk pork sausage
1 – 6 oz. can tomato paste
1 – 14-1/2 oz. can diced tomatoes, undrained
1 envelope taco seasoning mix
3/4 c. water
1-1/2 c. shredded cheddar cheese
1 c. shredded Monterey Jack cheese
2 c. chopped lettuce
1 c. diced fresh tomato
1/2 c. each, sliced ripe olives and sliced green onions

In a medium bowl, combine first 4 ingredients. Add milk and butter; mmix well.  Press onto bottom and sides of a 12 to 14-inch pizza pan. Bake at 400 degrees for 10 minutes or until edges are slightly browned. Cool. In a large skillet, brown beef and sausage; drain. Stir in next 4 ingredients; bring to a boil. Simmer, uncovered, for 5 minutes. Spread over crust. Combine cheese; sprinkle 2 c. over the meat layer.  Bake at 400 degrees for 15 minutes or until cheese melts. Top with lettuce, tomato, olives, onions and remaining cheese.  Makes 4-6 servings.

Thought for the Day: A good letter, in this era of telecommunications satellites and quipping  note paper, is similar in quality, to a handmade afghan, a jar of homemade jam; a small act of grace, or a hand made little gift from one human being to another. I’m so old-fashioned that I still like to write a note, call someone to hear their voice, laughter, or share sorrow with them.
