Summer cancellations from COVID-19 concerns now include Karl Oskar Days and the County Fair
The Lindstrom City Council voted May 21 to call off Karl Oskar Days this summer.  The entire summer outdoor concert series Harmony in the Park has also been called off, in a follow-up vote after just the first two musical performances were cancelled last month.  Lindstrom City Council discussed the celebration and decided the events cannot be offered and still follow guidance for virus avoidance.  The council expressed hopes the events coordinator will be able to develop some sort of virtual experience for the KO Days Ambassadors and create something online in the vein of a Karl Oskar tribute or virtual event, to keep the community engaged.

Simple ground beef casseroles
It’s about ground beef today, or hamburger, as most people call it. Many recipes tell us to drain off the fat after browning hamburger, but a lot of fat often stays behind. Even though it’s an unwanted contributor to cholesterol in the bloodstream, that fat, which rises to the top of whatever the final preparation is, it’s not good for us. Some five years ago, a physical chemist and physician published a sort of recipe in a journal of medicine to give home cooks a way of removing both cholesterol and fat from the hamburger.

Can we all just get along? Sadly it seems we can't, get out and take a walk
Well it’s official - I am utterly and completely sick of the pandemic. Tired of the negative news. So unbelievably tired of the partisan bickering from every side. Sick of people demanding you to declare what side you are on in regards to the stay-at-home orders.  Just tired. Beaten down and tired.

Rhubarb on my mind
It’s about a veggie with the red stalk and green hat that is growing in many gardens. Rhubarb. And yes, rhubarb is a veggie, but many of us call it a fruit, and so do I. Do you know how much rhubarb to pick, or buy, when you’re making a pie, a cobbler or whatever your recipe calls for? This is what you will need; 1 lb. of diced will give you about 3-1/2 cups 1 lb. cooked, two cups. To make a nine-inch pie, you will need six cups diced. This amount is cutting the pieces in 3/4 inch slices.
