Recipes that taste like summer
After the cold and cloudy days we’ve had lately let’s think about a fruit that is yellow, juicy and sweet. It’s not a lemon, it’s the pineapple. Bud and I had the opportunity to vacation in Hawaii with some of our family and while there we visited a pineapple plantation. What an interesting sight! There were rows and rows of different size plants, from baby plants to larger plants with pineapples ready to pick. We had the opportunity to sample different types of food that include pineapple—ice cream, cake, candies. We learned how to remove the skin and slice the pineapple. To remove the “eyes” that at lie diagonally around the fruit make v-shaped cuts along the spiral row of eyes and lift out the strips, taking out a row of eyes at one time. This is an easy way to remove the eyes with little waste. Then cut the pineapple in half or quarters vertically or cut it horizontally into slices.

For the love of hamburger hotdishes
It’s about ground beef today, or hamburger, as most people call it. Many recipes tell us to drain off the fat after browning hamburger, but a lot of fat often stays behind. It’s an unwanted contributor to cholesterol in the bloodstream, it’s not good for us. Some five years ago, a chemist and physician published a sort of recipe in a journal of medicine to give home cooks a way of removing both cholesterol and fat from the hamburger.

Winter Blast sputtered but still had some fun times, tips for cold
Well our annual Winter Blast was a bit of a downer.  Mother Nature decided to not cooperate and the cold temps in turn cancelled many of the outdoor events.  A lot of the kids events were also cancelled, but on a bright note, there were a few events that did go on.  The polka party at Lindstrom City Hall was very well attended, and the food and drinks were great.  There were a few brave souls that ignored below zero temps and ran a 5k Saturday morning in Center City. The fire department did a great job ensuring everyone was quickly warmed up after the races. The Chisago Lake Lutheran Church spaghetti dinner was successful as was Bingo at Trinity Lutheran in Lindstrom.  Maybe next year we can have a full schedule including radar runs, outdoor activities including an ice carousel and the weather will cooperate.

Warm up with comfort food
I’m glad that January has come to an end! That means there are only about three months until the calendar says it’s spring. I won’t talk about how cold it has been as you already know that. All I know is it’s time for making casseroles, soup, cookies, bars, cake, etc.
