Will you be having leftover turkey after your Thanksgiving dinner? If you’ve been invited to friends, relatives or are eating out at a restaurant, you really shouldn’t bring a “doggy bag” in hopes of bringing home enough turkey for a sandwich! We have a couple of family members who, two days before Thanksgiving, had someone in the meat department, where they bought the bird, cut it in half for them. So now they have turkey to use in recipes instead of hoping there’ll be leftovers to take home. Of course, it’s recipes using leftover turkey.
TURKEY - VEGGIE STIR FRY
3 c. cooked rice (1 c. raw rice)
2 t. cornstarch
2/3 c. water
2 T. soy sauce
2 T. dry sherry (you could use apple juice or cider)
1/4 t. sesame oil (can use olive oil) 1 clove garlic, minced
3 T. canola or vegetable oil
2 medium carrots, cut into 1/4” diagonal slices
1/4 c. peanuts
2 c. cooked turkey, cut in julienne strips
1 - 6 oz. pkg. frozen pea pods In a small bowl, combine cornstarch with water; add next 4 ingredients; set aside. Heat oil in a large skillet or wok over medium heat. Add carrots and stir-fry over medium heat, stirring until crisp tender. Add peanuts and cook, stirring, one minute. Add turkey and pea pods and cook, stirring for 2-3 minutes. Stir cornstarch mixture, add to turkey mixture, continue to cook, stirring 2-3 minutes or until sauce thickens. Serve over hot-cooked rice. Makes four servings. Note: Cook rice while preparing turkey mixture, or cook is first and heat in micro until hot, just before serving.

CRUNCHY, TURKEY SALAD
1/2 c. mayonnaise
1 T. orange juice
3 c. cubed, cooked turkey
1 medium, unpeeled, red-skinned apple, diced
1/4 c. diced celery
2 green onions, chopped, using part of green tops, or 2 t. minced onion
1/4 c. chopped pecans In a large bowl, combine mayo and o.j. until well blended. Add rest of ingredients. Mix lightly. Refrigerate at least 30 minutes. Makes 8 servings. Note: You may also add 3/4 c. green grapes, cutting larger grapes in half.

BARBECUED TURKEY SANDWICHES
2 - 8” ribs celery, thinly sliced
1/2 c. diced onion
1/4 c. finely diced green pepper
1/2 c. ketchup
1/4 c. packed brown sugar
1-1/2 t. chili powder
1/2 t. salt
1/8 t. each pepper and hot pepper sauce
4 c. shredded cooked turkey 8 hamburger buns, split In a saucepan saute celery, onion and green pepper until tender. Add next 7 ingredients. Over medium heat, bring to a boil. Lower heat; cover and simmer 5 minutes. Add turkey, heat through. Makes 8 - 1 bun servings. Note: Unless you really like spicy foods, cut back on the pepper sauce or omit it. Also, you can use your favorite barbecue sauce if you wish, eliminating ketchup and next 6 ingredients.
