She met Joe Eichten through his cousins at a dance in Centerline, MI. Their courtship was by mail and they married January 20, 1948. Mary then came to Minnesota to live a new life on the farm in SW Minnesota and Sauk Centre, then settling in Center City, MN to raise their family of 10 children, 5 boys and 5 girls.
She worked at Chisago Lakes High School as secretary and school nurse before becoming the first cheese maker in the United States to produce European cheeses on the dairy farm. She was chosen as Minnesota’s Most Outstanding Woman in the State in 1981, mainly due to her being a woman business owner and promoting the natural food industry through her development of Dutch and Danish cheeses.
Mary was a true confidante to many people and cared for others, always willing to include them in her life. Her greatest love was ballroom dancing with her husband, Joe. She did sewing of all kinds and enjoyed a good novel, playing cards, and watching movies with family.
She is preceded in death by her husband Joseph; sons John and Joe Jr.; son-in-law Paul Miron; grandchildren Joe III and Jessica Eichten; and sibling Dick Weingartz.
Mary is survived by her children Eileen (Ralph) Carlson, Ed (Pam) Eichten, Jim (Laura) Eichten, Cathy (Gerry) Miron-Kieckhofer, JoAnn (Carl) Alioto, Rochelle Eichten, Kevin (Louise) Eichten, Geralyn (Brett) Nelson, and Mariette (Bill) Hoefler; 30 grandchildren, 32 great grandchildren; siblings Barbara, Margaret, Cecilia, RoseAnn, James, Jack, Phyllis, Catherine, Robert, and Bernie Weingartz.
Mass of Christian Burial will be held 11 a.m. Wednesday, October 8 at St. Bridget of Sweden Catholic Church in Lindstrom. Visitation 4- 8 p.m. Tuesday at St. Bridget’s and one hour prior to the mass at church. Arrangements by the Grandstrand Funeral Home in Lindstrom.
