Once again the celebration of Karl Oskar Days is here and what a good time to take in all of the many things to do or see, climaxing with the awesome display of fireworks. A big THANK YOU to all who worked so hard to make these festivities possible.

It’s about salads today. Everyone likes salads, regardless if it’s a variety of lettuce, fresh or canned fruits or a mixture of both as well as sea foods and fowl, added to these salads can be a complete meal deal. With today’s food safety on our minds, there are easy preventatives that take just a couple of minutes to help keep any nasty germs from lurking in these foods. Think about the many people who handle these fruits and veggies. Wash the skins as well. Who knows if a big spider or other insects have been crawling around the skins.  Be sure to wash grapes, peaches and strawberries, etc. just before adding them to the recipe.

CREAMY FRUIT SALAD
1-11 oz. can mandarin oranges, drained well
1 small can each, sliced peaches and pineapple chunks, drained well
4 oz. cream cheese, softened
1/2 c. plain yogurt
1/4 c. sugar
1 c. mini marshmallows

In a medium bowl, combine first three ingredients; set aside. In a small bowl, beat cream cheese, yogurt and sugar until smooth. Pour over and toss to coat. Refrigerate for 15-20 minutes. Before servings, fold in marshmallows. Makes four servings.

SUNSHINE SALAD
1-20 oz. can pineapple tidbits, drained well, saved liquid
1-11 oz. can mandarin oranges, well drained, save liquid
1- pkg. instant lemon pudding
1 c. quartered strawberries
1 c. sliced bananas

In a large bowl, combine pineapple, strawberries and oranges and set aside. In a large bowl, combine juices with pudding mix. Fold in pineapple, oranges and strawberries; chill for at least two hours. Add bananas just before serving. Makes eight to 10 servings.

AMBROSIA FRUIT SALAD
1 fruit cocktail, well drained
1 can pineapple chunks, well drained
1 c. green grapes
1 c. red grapes
1 c. mini marshmallows
1 medium banana, sliced
3/4 c. light vanilla yogurt
1/2 c. flaked coconut

In a large bowl; gently fold together all ingredients; except bananas. When ready to serve, fold in bananas. Makes six servings.

Thought for the Day: Again, take in as much as you can of our Karl Oskar celebration. There’s something for everyone to enjoy.
