A young boy had his first job working at a lumber camp close to where he lived. Breakfast was early and the workmen always ate a lot of food to get ready for a long day of work in the woods. At the boys first breakfast, one of the many pies was passed to the boy who politely passed it on to the next work man. “No apple pie, boy? One tough looking woodsman asked. “No thank you, not for breakfast,” he answered, passing the pie along. No one said a thing at the table and the man looked at the boy with a growly looking face yelling at him, “When do you eat pie, boy?” The boy cringed, red-faced. By the end of the week he was eating apple pie like the other woodsmen…….at breakfast.

APPLESAUCE BARBECUE CHICKEN
Four boneless, skinless chicken breasts halves (about 6 ounces each)
1/2 t. pepper
1 T. olive or canola oil
2/3 c. each, chunky applesauce and spicy barbecue sauce
2 T. brown sugar
1 t. chili powder
Sprinkle chicken with pepper. In a large skillet, brown chicken on both sides over medium high heat.
In a small bowl, combine remaining ingredients; pour over chicken. Cover and cook over medium heat, basting occasionally for 10 minutes or until meat thermometer reads 170 degrees. Makes 4 servings. Serve with a side of wild rice or brown rice and a vegetable salad for a delicious dinner. Be sure to pass the bars or cookies!

MICROWAVE APPLE CRISP
4 medium tart apples, peeled and thinly sliced (Haralson, Granny Smith, Braeburm, Cortland)
2 t. lemon juice
1/3 c. flour, divided
1/4 c. sugar
3/4 t. cinnamon, divided
2/3 c. old fashioned oats (can use quick, adding 2 T. oats)
1/2 c. packed brown sugar
3 T. cold butter
Vanilla ice cream, whipped cream or whipped topping
In a large bowl, sprinkle lemon juice over and toss. In another bowl, combine 1 T. flour, sugar, and 1/4 t. cinnamon. Toss with apples. Turn into a glass, greased, deep-dish 9-inch pie plate or 9-inch square glass baking dish.
In a small bowl, combine oats, brown sugar and remaining flour and sugar. Cut in butter with pastry blender until crumbly; sprinkle over apple mixture. Cover with waxed paper. Microwave on HIGH for 5-7 minutes or until apples are tender. Serve with ice cream, etc. Makes 6 servings.
CREAMY APPLE DESSERT
1 c. flour
1/4 t. each, salt and cinnamon
1/3 c. butter or margarine
1/4 c. sour cream
2-1/2 c, peeled, sliced apples, (2 large apples, cut about 1/4-inch thick)
1/2 c. sour cream
3 egg yolks, slightly beaten
1 t. vanilla
1 c. sugar
1/4 t. salt
1/4 c. flour
Grease a 9x9-inch baking pan. Combine flour, salt and cinnamon; cut in butter with pastry blender until crumbly. Stir in 1-1/4 c. sour cream. Press in greased 9x9-inch baking pan. Bake at 350 degrees until golden brown, 20-25 minutes. Cool slightly. Arrange apple slices evenly over top. In a medium bowl, combine remaining ingredients; pour over apples. Return to oven; bake 40-50 minutes or until knife inserted near center comes out clean. Cool; cut into squares. Serve with a dollop of whipped cream or whipped topping with a pinch of cinnamon on top if you wish. Makes 9 servings.
AUTUMN APPLE SALAD
1 – 20 oz. can crushed pineapple, UNdrained
2/3 c. sugar
1-3 oz. pkg. lemon-flavored gelatin
1-8 oz. pkg. cream cheese, softened
1 c. unpeeled, diced apples (McIntosh, Cortland, Jonathan)
1/2 to 1 c. chopped walnuts
1 c. diced celery
1 c. whipped topping
Lettuce leaves
In a medium saucepan, combine pineapple and sugar; bring to a boil and boil 3 minutes. Slowly add gelatin, stirring until dissolved. Cut cream cheese into 1-inch cubes and add to gelatin until mixture; stir until mixture is thoroughly combined. Cool (NOT UNTIL SET). Fold in apples, nuts, celery until combine. Gently fold in whipped topping. Turn into 9-inch square baking pan. Chill until firm. Cut into squares and serve on lettuce leaves. Sprinkle finely chopped walnuts over top just before serving if you wish.. Makes 9-12 servings.
