Betsy was born on August 23, 1941 to William and Syneva Bevan.
She grew up in Chisago City where she graduated from high school. After college she relocated to Mankato, Minnesota where she raised her family. She taught English at the Mankato High School for several years. She enjoyed writing, and during this time she co-authored a best selling cookbook for the American Heart Association.
Betsy always displayed a passion for helping others and bettering the communities she lived in. She always gravitated to the underdog. She had an uncanny ability to spot someone who was hurting and in need and get involved in helping them. She was an environmentalist who coordinated her daily walks with picking up trash. She enjoyed and supported the theater. She was an avid reader and a member of several book clubs. She treasured her many friends and was dedicated to her family.
Left to cherish her memory are her children; Jeff (Jeanne) Vonholtum, Troy (Sharon) Eykyn and Pepie (Dave) Chapman, grandchildren, Bryce and Lauren Chapman, Louis (Celestine) Chapman, Lynsey (Brandon ) Croat, Shay (Alex LeBrun) Vonholtum, Jonathan, Kaylee and Jessica Eykyn; great grandchildren, Knox Croat and Sophia Vonholtum.; Isaac and Johannas Chapman and brother Bill (Martha) Bevan.
Betsy was preceded in death by her parents, William and Syneva Bevan and her brother Jerry Bevan.
A Celebration of Betsy's life will be held when friends and family can attend without fear.
